1/2 Cup dried tree ear mushrooms rehydrated
2 cups slices okra
1 clove garlic
salt and pepper to taste
Hydrate the mushrooms
Toss together with Sliced okra
Add garlic minced and cover. Cook in a microwave safe bowl for 5 minutes
Serve and add salt and pepper to taste
2 Cups or 1 large head of cauliflower cut up into pieces
1/2 Cup Cheddar cheese
Place the cauliflower in a microwave safe bowl
Microwave 4-5 minutes covered (until cooked)
sprinkle cheese on cheese and cover
Let sit for 3 minutes covered while cheese melts

Place layers of your chosen ingredients in the pan and lightly drizzle mayonnaise (from a squeeze bottle) in between each layer.
Top with a pouring of ranch dressing over the salad top and a sprinkling of cheese and the cherry tomatoes

Stuffed Lasagna Zucchini Boats Directions:
Preheat the oven to 400 degrees F. Slice each zucchini in half, lengthwise. Using a metal spoon or melon baller, hollow out the center of each zucchini. Place zucchini in a baking dish and set aside. (remove seeds... this can be done ahead of time and then placed in a zipped plastic bag or a baking dish)
Put a tablespoon of olive oil, garlic, and the spinach in a bowl in the microwave. Allow it to heat through for 1-2 minutes.
Place the ricotta cheese, 1 cup of the shredded mozzarella, the parmesan, salt and pepper in a large bowl and stir to combine. Add the cooked spinach and mix into the cheese mixture.
Spoon the filling into the zucchini boats. Evenly spoon on the marina sauce and top with the remaining ½ cup of shredded mozzarella cheese. Cover the baking dish with foil and bake for 30 minutes. Uncover and bake for an additional 5 minutes.
